What on earth is Gestalt and what difference does it make to my documents?

Although Gestalt theory is commonly used as a tool in design these days, to increase the ease of use of something like a webpage,  Gestalt can also refer to the
particularly human ability to detect patterns from incomplete information, an ability that Artificial Intelligence (or AI) may never completely catch up with.
